Stuffing Balls


  • 1 cup finely chopped celery
  • ½ cup chopped parsley
  • ½ tbsp ground sage
  • 1 ½ tsp dried thyme leaves
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 6 cups toasted and chopped low-carb bread
  • 6 cups cornbread stuffing
  • 1 large egg, slightly beaten
  • 1 can chicken broth


  1. Prepare: Preheat oven to 375°F and grease a baking pan.
  2. Cook Vegetables: Sauté onions in butter until soft, then add celery and herbs, cooking for 5 minutes.
  3. Mix: In a large bowl, combine breads, then add egg and ¾ cup chicken broth, mixing well. Incorporate sautéed veggies and seasonings.
  4. Form Balls: Shape the mixture into balls and place on the baking pan.
  5. Bake: Cook for 20 minutes, then gently add remaining broth and bake for another 15 minutes.
